Leveraging Exclude List in Track Events

We have recently started leveraging track events but are unsure how to separate production from non-production events. Based on the documentation and UI when viewing track events, I'd expect it to work similar to pages/features where filtering by Everyone vs Excluded Accounts and Visitors does this separation for us, however all our events from testing and QA environments show up when filtering by Everyone.

I can't find anything in the documentation that references this nor could I find anything when searching the community, so looking for assistance!
