Is it possible to create an onboarding questionnaire?
When a user signs up, I would like him to answer a few questions like team size etc once he's inside the platform.

Yes, it is absolutely possible through our different types of guides. I would recommend checking out some of these resource articles here, especially on how to create a guide and a poll :
