How can I add the date and time of event to a Visitor Report?
I am generating a Visitor Report for a Segment to track user interactions with a Guide. I do not see any way to add a column to the Visitor Report documenting the date and time of the interaction when I use the "Edit visitor report" menu to add columns. How can I track the date and time of each user's interaction with the Guide?

can you define interaction? Do you mean views or using things like buttons? Each guide has a table with all the interactions listed out by visitor on its Metrics tab, and from there you can add additional columns. That may be a better option for this :)
Within Guide Activity, I would recommend downloading the data as a CSV.
Once that is done you can add it to a Pendo dashboard via the custom widget, iFrames, and this will allow you to pull in the data. The only problem is the list won't update without another manual download of the guide's activity. (Probably best reserved for a post-op case study once the guide has run its course).
